FIELD: food industry. SUBSTANCE: method involves processes of washing, paring, cutting, blanching, chemical treatment, for example, with solution of sodium sulfide, and desiccation in boiling layer at oscillating regime of temperature change of heat carrier at input into layer. Desiccation is carried out with temperature oscillations of heat carrier equal to 2-14 min at maximum temperature of heat carrier not higher 160 C, and minimum, not lower 60 C. Amplitude of oscillations is 5-35 C. EFFECT: higher efficiency. 3 tbl
