FIELD: meat mincing under industrial conditions. SUBSTANCE: process involves a few preparatory stages of meat cutting into separate pieces, catching inclusion pieces, and discharging them through special pipe. Prior to final mincing, meat is kneaded with inclusion pieces. In first option, meat mincer has cutting unit built up of plates and abutting blades; separating ring is placed in body neck, in front of first plate on the path of meat. In second option, mincer has hollow shank of feeding worm shaft and intake holes to pass inclusion pieces to discharging pipe installed on body neck axis. Knife blades are joined to hub by means of perforated bushing; knife hub is provided with separating ring. EFFECT: improved design and facilitated procedure. 17 cl, 40 dwg
