FIELD: meat crushing equipment. SUBSTANCE: method involves cutting bulk meat into parts; freezing out in cutting unit provided with grids and adjoining rotary cutters, with fresh-killed or cooled meat being crushed together with frozen meat, with pieces of raw material being rotated by cutter blades at final stage of meat crushing at each set of cyclically repeated phases of the process and major part of meat pieces being fed in position different from that of previous cycle upon completion of reciprocation to grid; heating raw material tissues under the action of sign-variable loadings. At initial stage of freezing out process meat pieces with non-unfrozen core are crushed by scrapping surface layers against opening edges of grid positioned at outlet of cutting unit. Meat may be additionally heated under the action of sign-variable loadings at initial stages of crushing in cutting unit of crusher. Cutters are made single-sided. Grids are arranged so that gaps are defined between rear sides of cutters faced one toward another and adjoining to grids. Blades of cutter engageable with grid positioned at outlet of cutting unit are provided with longitudinal teeth, which are positioned in alternation with slots. At least one tooth on each cutter engageable with grid at outlet of cutting unit may be made sharpened. Blades of all cutters adjoining front sides of grids in the direction of advancement of raw material may be provided with longitudinal teeth.
