FIELD: meat grinding in home and production conditions. SUBSTANCE: the method consists in separation of meat from gristle scraps, tendons and other rough inclusions by cutting-off of the layers pressed in the grill holes and scraping-off of the remaining fibres against the sharp edges of the grill holes; after that foreign inclusions are discharged in a helix from the zone of action of the cutting member and unloaded separately from the ground meat. The device for realization of this method uses a feeding screw conveyer and a cutting assembly composed of several cutting pairs in the form of grills, rotating multi-blade knives pressed to them and a branch pipe for unloading of inclusions. Installed in each pair of adjacent grills are two one-sided knives being a mirror reflection of each other. The blades of one knife may be arranged in cavities restrained by the projections of the blades of the adjacent knives. In cross-section the knife blades have an L-shape and are made with chamfered corners. The device may be furnished with a set of replaceable rings of different thickness.
