FIELD: food engineering. SUBSTANCE: set of cutting tools has cutting pair with disk-shaped grid and knife, blade with projection at one end, whose cutting edge is adapted for cooperation with working surface of disk-shaped grid. Set of cutting tools may be provided with annular projection and its working surface is positioned at end of annular projection. Width of grid annular projection is equal to length of cutting edge of knife blade projection, having at least one portion narrowing in the direction of peripheral part and at least one portion widening in the direction of peripheral part. Disk-shaped grid is provided with annular projection having width equal to length of cutting edge of knife blade projection, with knife blade projection widening in peripheral direction. Working part of cutting tool has projections made on knife blade ends and annular projection of grid. Projections are made from wear-resistant materials, with hardness of material from which knife blade projections are manufactured being within the range of 62-73 R and hardness of material from which annular projection of grid is manufactured being within the range of 58-67 R. Hardness of material of front part of blade projection may exceed hardness of material of knife blade projection core.
