FIELD: equipment for clarification and stabilization of grape must or wine material. SUBSTANCE: centrifuge has housing with centrifuge and sludge collectors, cylindroconical rotor mounted within housing and provided with openings for discharging centrifuge and sludge into collectors, cylindroconical auger axially positioned within rotor and having drum with windows for directing basic suspension into conical part of rotor, feeding pipeline positioned within auger drum and flocculation promoter feeding device with chamber positioned within housing and filled with carbonic acid. Length of chamber is 2/3 of length of cylindrical part of rotor. Flocculation promoter feeding device has liquid carbonic acid source. Inlet supersonic nozzles with swirlers are made in rotor wall in the vicinity of chamber. EFFECT: increased efficiency and improved quality of wine material. 2 dwg
