FIELD: wine making. SUBSTANCE: in extractor containing casing with arranged in stepped- order and successively connected extraction sections and vertical discharge section, driven worms installed in sections, loading hopper, connecting pipes for withdrawing grist and miscella, and those supplying extractant and steam into each extraction section, at least one of the latter is provided with a drum with perforation in the form of supersonic nozzles installed such as to form a collar communicating with steam-supply connecting pipe and being free to rotate from drive in direction opposite to that of worm. The drum is embraced with perforated stator, whose perforations include swirlers and are disposed in planes similar to those where drum nozzles are disposed along coaxial circles with unequal and aliquant circle pitch.
