FIELD: fat-and-oil industry. SUBSTANCE: invention focuses on producing fats for medical and veterinary destination. Raw material is disintegrated, treated with electric current, and hydrolyzed, hydrolysis being carried out by way of simultaneously destroying and dissolving protein components of tissues and cells with current and electrolyte solution in cathode chamber of electrolyzer. Process parameters are chosen in such a way as to provide initial pH value of electrolyte-raw material mixture equal to at least 12.2 and, as electrolyte, aqueous solution of alkali metal salts is used, raw material to electrolyte ratio being chosen in the range 1:(0.5-3.0), and current density ranging from 350 to 1000 A/sq.m.
