FIELD: food industry, cosmetic industry, medicine. SUBSTANCE: the present innovation deals with sorption technologies to obtain chitin out of shell-containing raw material, for example, shrimps and others. Raw material or ready-to-use product is treated with skimming preparation as preobtained aqueous solution of skimming complex at 0.1-8.0% concentration in composition of anion-active and nonionogenic surface-active substances, sodium tripolyphosphate, sodium silicate and sodium sulfate. The innovation enables to increase degree of raw material skimming and increase chitin quality: improve its organoleptic, sorptive and other characteristics.
