FIELD: wine and canning industry. SUBSTANCE: apparatus has housing, perforated and porous drums mounted on hollow shafts within housing, perforated stator, liquid carbon dioxide source, unstabilized raw material vessel, stabilized raw material vessel and sediment vessel. Perforated drum is mounted within housing in spaced relation to housing wall and is provided with nozzle-shaped openings. Porous drum is mounted within perforated drum in spaced relation to its wall so as to define annular channel. Liquid carbon dioxide source is communicated with space. Unstabilized raw material vessel and sediment vessel are connected with opposite ends of annular channel through hollow shaft. Stabilized raw material vessel is connected through hollow shaft with porous drum cavity. Perforated stator is positioned in space between housing and perforated drum. Axes of perforations of drum and stator are positioned in planes extending in axially aligned circles at different aliquant peripheral pitch.
