FIELD: biotechnology. SUBSTANCE: baker's yeast Saccharomyces cerevisiae is cultured on medium containing carbon, nitrogen and phosphorus sources. Ortho-phosphoric acid is used as a single phosphorus source that is added once to head fermenter after cultural fluid removing and to commercial fermenters before culturing onset at amount 5-10 l/1 t yeast increment. Once feeding ortho-phosphoric acid ensures to decrease pH of cultural fluid to value inhibiting bacterial microflora growth but activates processes of RNA synthesis that makes conditions for the following active growth. Ortho-phosphoric can be dosed additionally if actual biomass increment will exceed the calculated one in order to eliminate process limitation by phosphorus.
