FIELD: meat industry. SUBSTANCE: method involves preparation of raw material including liver, blood plasma and collagen-containing raw material with calcium ions. The latter is subjected to preliminarily treatment. Then raw material is ground in hasher, and paste mass is prepared in cutter in two stages. During the first stage, beef udder, used as collagen-containing raw material, is ground in presence of blood plasma. Ratio of beef udder and blood plasma from 1:1 to 4:1. During the second stage, added are raw liver preliminarily minced and mixed with 1.1-1.4-% sodium chloride and 7.5 mg of sodium nitride, and aged in brine at temperature 0-4 C for 16-26 h; and soya isolated proteins in the amount from 2 to 4% to raw material mass. Sodium chloride is added at the end of the second stage of preparing paste mass in cutter in amount from 1.2 to 1.4%. Ready-to-use paste mass is stuffed in casings, heat treated, and cooled.
