FIELD: meat industry, particularly, development of receipt for preparation of meat paste. SUBSTANCE: meat paste "Yuzhny" contains pork liver and cooked hog skin, and additionally includes cooked semi-fatty pork. Meat content is additionally enriched with fresh carrot, eggplants, ground walnuts, and dry milk. Common onion, common food salt, granulated sugar, powdered white pepper, wheat flour, sodium nitrite and broth from cooking of meat products are introduced. Vegetable ingredients are used in determined amount and so collected, that prepared product has improved organoleptical properties with unexpected taste and aroma of fresh mushrooms.
