FIELD: food industry. SUBSTANCE: cleaned algae are crushed to particle size of less then 100 mcm and colorant is extracted with fresh water. The resulting suspension is divided into two fractions: first fraction containing colorant solution is cleaned, concentrated and stabilized, and the remaining fraction is extracted at 65-95 and kept for at least 5 min, the resulting agar solution is filtered and dehydrated by spray drying.
