FIELD: biotechnology, dairy industry. SUBSTANCE: strain of bifidobacterium Bifidobacterium bifidum Y-4 (VKPM-S-1257) is able to multiplicate actively in milk and other nutrient media and fermenting milk for 14-16 h and showing stable symbiotic relationships with lactic acid bacteria. Strain Bifidobacterium bifidum Y-4 is able to develop actively in nutrient media and milk, ferment milk at 5% inoculum dose at 37.5 ± 0.5 C for 14-16 h and showing symbiotic relationships with different species of lactococci and lactobacteria in milk. New strain of bifidobacterium can be used in dairy industry for preparing bacterial ferments, bacterial preparations, fermented dairy products and food agents.
