FIELD: microbiology and biotechnology. SUBSTANCE: method includes preparing dough, cooking dough, cooling cooked mass, saccharification, and sterilization. Prior to be placed into fermenter, wort is cooled in vacuum-vaporizing chamber by way of depressurizing it, after which prepared wort is poured in into two sealed buffer collector-dispensers. From the latter, wort is alternately fed into fermenter. According to invention, filling of each collector-dispenser by wort is accompanied by equalizing pressure in vacuum-vaporizing chamber and corresponding collector- dispenser. When the wort is filling one of the two collector- dispensers, into the latter, sterile air is fed under pressure to provide continuous inflow of wort into fermenter. Installation contains mixer, cookers-saccharifiers, pump with its outlet connected to contact head, sterilizer, heat exchanger, vacuum pump, product pipelines, and valves.
