FIELD: microbiological methods. SUBSTANCE: installation comprises n fermenters successively connected to each other through n-1 overflow pipelines, accumulator of nutritive wort, distributive pipelines, valves, and sterilizer of fermenters. Lower fermenter outlets are connected respectively through third-group valves to pipeline of ripened culture liquid and through fourth-group valves to pipeline for draining worked out water after sterilization of fermenters. Installation further contains manifold connected to yeast generator, whose outlet is linked with yeast pipeline connected through yeast supply valve with head fermenter. Each fermenter is provided with level sensors connected to data entries of control unit. All valves are electrically controlled and equipped with executive elements. Upper outlet of n-th fermenter is connected through n-th overflow pipeline to head fermenter inlet thereby forming circuited battery of fermenters. First group of control unit outlets is linked with controlling inlets of executive elements of the first valve group; second group of control unit outlets with controlling inlets of executive elements of the second and fourth valve group; and third group of control unit outlets with controlling inlets of executive elements of the third valve group. Control inlet of executive element of yeast supply valve is linked to first single controlling outlet of control unit, whose second single outlet is linked to sterilizer controlling inlet.
