FIELD: confectionery industry. SUBSTANCE: milk toffee contains concentrated milk, syrup, butter, sugar and toffee essence. Additionally introduced in it is thick extract of licorice root, or dry extract of licorice root, or liophilized powder of licorice root extract with content of glycyrrhizic acid not less 18, 25, 27.5% and humidity, 32-38%, not more 5%. Ingredients are taken in the following ratio, kg/t: concentrated milk, 452.8; sugar, 349.7; syrup, 296.9; butter, 45.4; toffee essence, 1.0; thick extract of licorice root, 20.0. Quantity of dry extract of licorice extract, or liophilized powder of licorice root extract introduced in formula is calculated by content of dry residue of extracts, taking quantity of thick extract of licorice root as a base.
