FIELD: sugar industry. SUBSTANCE: apparatus has knife frame with adjusting plank, beet splitting knives mounted within frame and beet chip cutting knives with triangular cutting edge. Each beet splitting is formed as right triangle. These knives are arranged and fixed in rows on separate plate so that acute angle of knife is oriented toward beet flow. Splitting knives in each row are offset relative to knives of other row by predetermined pitch value. Space between knives of one row is equal to pitch value multiplied by the number of rows. Cutting knife is fixed in frame and may be lifted to height providing predetermined beet chip section shape. Apparatus allows high-quality beet chips of predetermined size to be produced.
