FIELD: food-processing industry. SUBSTANCE: method involves forcing product heated to high temperature through two sections; during the first stage, directing cooling medium in countercurrency with product flow through first section; during the second stage, directing cooling medium through second section. Apparatus is positioned between holding chamber in thermal treatment unit and additional treatment unit. Apparatus has two indirect cooling sections. Second section is positioned behind first section downstream of product flow direction. Cooling is performed by forcing heated product through both sections.
