FIELD: food industry.
SUBSTANCE: group of inventions relates to food industry, particularly, to a device and a method for heat treatment and sterilisation of a liquid food product, to avoid spoiling of a food product caused by direct contact with heat carrier, time required for heat exchange is reduced, conditioning time of food product in an area with high temperature is reduced, and deterioration of quality of food product, caused by high temperature is reduced. Device comprises liquid food pump (2) for outlet concentrated liquid food (1); coil-type tubular heat exchanger (7) for heat treatment, provided within let (3), outlet (4) and channel (6), formed by tubular exchange wall (5); heat exchanger (12) for cooling, provided with inlet (8), outlet (9), and channel (11), formed by tubular exchange wall (10); prepared liquid food reservoir tank (14) for temporarily storing cooled and from-concentrate liquid food (13); dilution water pump (16) for discharge of cooling dilution water (15) disinfected/sterilised and fourth channel (24) for creating fluid-tight communication between outlet (22) of pump (16) for diluted water and connection (23) of second channel (19).
EFFECT: use of group of inventions will enables to avoid spoiling of a food product caused by direct contact with heat carrier.
