FIELD: food engineering. SUBSTANCE: apparatus has bin with dough mixer, pressing chamber with auger, cutting head and driving device. Cutting head is formed as synchronous motor with electronic control unit for controlling continuous regulation of output shaft rotational speed. Synchronous motor is mounted on outside bracket. Cantilevered carrier finger with spherical tip is mounted on output shaft. Spherical tip is telescopically connected with self-adjusting spring-loaded floating knife having hollow cylindrical casing. Knife cutting edge adjoins to macaroni products die outer surface. Construction of apparatus allows constant length of macaroni products to be maintained.
