FIELD: food industry. SUBSTANCE: method provides for loading of material into boiling still with dephlegmator and condenser-cooler, heating with live and spent steam, filling of dephlegmator and cooler with water, supply of water to dephlegmator. Maximum amount of cooling water is supplied to dephlegmator and minimum amount of water to condenser-cooler. Condensate from condenser-cooler is returned back to boiling still. After stabilization of column operation, supply of cooling water to condenser-cooler is discontinued for a short period of time. Line of condensate of condenser-cooler is washed with water to boiling still and operating conditions are changed over for withdrawal of majority impurities. EFFECT: higher operation efficiency; economic efficiency of withdrawal of majority impurities of fractions due to stable increasing of temperature of reflux, and reduced time of delay.
