FIELD: food-processing industry. SUBSTANCE: method involves atomizing water to fog state; mixing with gas flow and subjecting food product to the action of obtained mixture. During water atomizing process, water is additionally exposed to ultrasonic vibrations and electrostatic force. To do that, water is directed through axial channel of resonator of pneumatic acoustic converter, to which constant high-voltage potential is supplied. EFFECT: reduced water consumption and enhanced reliability in keeping food product.
