SUBSTANCE: method involves cooking food in apparatus with flat frying surface; frying food on frying surface with depressions isolated one from the other so that fat is kept in depressions, when frying surface is inclined at an angle of 3-7 deg. Apparatus has casing with flat frying surface provided with depressions isolated one from the other. Area of depressions is 40-90% of frying surface area and depth of depressions is 0.5-1.5 mm. Depressions may be made circular in plan, may be evenly spaced one from the other or arranged so as to form pattern.
