FIELD: food industry, in particular, technology of jam preparation from whole fruits. SUBSTANCE: method involves desorption of cuticular wax from surfaces of whole fruits by passing of nonpolar gas stream in supercritical state through gas-dynamic siren. EFFECT: increased productivity and reduced accumulation of oxymethylfurfural in jam.
