FIELD: food industry. SUBSTANCE: invention relates to methods of preparing food plant protein for its further use in the production of combined full-value foodstuffs and protein compositions. Milled raw (particles size is 100 mcm) is separated from envelopes. Extraction is carried out by steps adding firstly ammonium sulfate solution at its mass part 0.48-0.50%. In 12-15 min the liquid fraction is separated and a precipitate is treated again with ammonium sulfate solution at its mass part 2.48-2.50%. Then procedure is repeated using a solution at mass part of ammonium sulfate 5.0-5.2% at the ratio meal : : extractant = (0.9-1.1):(4.9-5.1) at 0-5 C at each stage of extraction. Proteins are precipitated from the total extract at pH 3.0-3.2. Method ensures to get the efficient combination of animal and plant proteins in the end product.
