FIELD: dairy industry. SUBSTANCE: method can be used in production of protein foods. According to method, ground, washed and dried grains of amaranth are subjected to stage-by-stage extraction by means of milk by-product. Proportion of extracting substance to raw material is 10:1. Introduced is sodium hydroxide with bringing pH to 10-11. Material is heated to 60 C and left to stay at this temperature during 8-10 h. Lipid-protein complex is separated. Application of aforesaid method allows for enhancing nourishing and biological value of lipid-protein complex together with improving its organoleptic characteristics.
