FIELD: food processing industry.

SUBSTANCE: claimed method includes wafer sheet baking from flour intermediate, including flour, water, soda, salt, melange, food phosphatides, vegetable oil; candy mass preparation containing agar, sugar sand, treacle, egg albumin, milk butter, concentrated milk, water, vanilla; application of candy mass on wafer sheets, cooling conditioning and cutting. According to present invention candy mass in applied on wafer sheets with humidity of 1.5-3 % and sheet temperature of 80-120°C. Further prepared sheets are additionally pressed, cooled at 8-15°C, and conditioned at room temperature for 24 hours.

EFFECT: confectionary with improved taste.
