FIELD: food industry. SUBSTANCE: hydrolysis of galactomannanes of liquid coffee extract is performed at 20 to 80 C involving immobilized beta-mannases covalently linked to carrier or adsorbed on the latter and then polymerized under conditions allowing preservation of enzymatic activity after continuous hydrolysis for 20 h. Process is carried out in continuous mode in reactor with fixed or fluidized enzyme bed or periodically with suspension of beta-mannases.
