FIELD: pasteurization of milk and liquid cultured-milk products in food industry. SUBSTANCE: method involves treatment of milk or liquid cultured-milk products in space between rotor and stator of sterilizer-homogenizer. Treatment is conducted at value of speeds gradient from 4.6 ·105 to 5.1 ·105 m/s. m under conditions of resonant oscillations of rotor and stator which are determined according maximum amplitude of sound oscillations. EFFECT: higher efficiency of pasteurization and prolonged storage life of milk and liquid cultured-milk products. 4 tbl
