FIELD: food industry.

SUBSTANCE: invention relates to the food industry, namely, to the production of food triticale-rye flour from a grinding mixture of triticale grains and rye grains. The method for obtaining flour consists in the fact that the initial raw material is preliminarily purified, and then a grinding mixture is made from prepared triticale and rye grains in a ratio of 1:1, 3:2 and 3.5:1.5, and the preliminary grinding mixture of triticale grains and rye is subjected to hydrothermal treatment by cold conditioning, moistening to a moisture content of 15.5-16.0% and softening for 6-8 hours. After that, the prepared triticale-rye grinding mixture is crushed on 5 torn systems and 5 grinding systems on roller machines with back-to-back grooves at a speed of rotation of the fast roller from 5.5 to 6.0 m/s, with a ratio of circular speeds of fast- and slow-rotating rollers from 1.5 to 2.5, with a density of cutting rollers from 8 to 10 pieces per 1 cm, with a flute slope of 8 to 10%, and with subsequent sorting of the grinding product on sieves of various sizes.

EFFECT: method allows to expand the range of flour-based food products by using the products of processing of the grain triticale-rye grinding mixture in the baking and confectionery industries.
