FIELD: production of juices from citrus fruits. SUBSTANCE: during preparation of citrus fruits, bitter substances are extracted by nonpolar liquefied gas. Then citrus fruits are impregnated, at pressure higher than atmospheric one, by miscella prepared at extraction of biomass of microorganisms Mortierella exigua by nonpolar liquefied gas. After it, pressure is relieved up to atmospheric one with a speed providing fruits freezing. EFFECT: increased stability of juice to microbial spoilage.
