FIELD: food industry, particularly, technology of juice production. SUBSTANCE: method involves extraction of bitter substances from citrus fruits by nonpolar liquefied gas. Then fruits are impregnated with miscella at pressure higher atmospheric one. Miscella is prepared by extraction of biomass of microorganisms Saprolegnia parasitica by nonpolar liquefied gas. Pressure is relieved up to atmospheric with speed providing fruits freezing. EFFECT: increased stability of juice to microbial spoilage.
