FIELD: food-concentrates industry; applicable for production of drinks concentrates. SUBSTANCE: after extraction of bitter substances from flavedo, citrus fruits are treated by lipid-containing extract of biomass of microorganisms Saprolegnia parasitica and aged. Then fruits are crushed, and crushed mass is concentrated with preparation of final product. EFFECT: increased stability of base for thickened drinks to microbial spoilage and stratification.
