FIELD: food industry.

SUBSTANCE: invention relates to equipment for bakery industry, in particular, to equipment for production of bagel dough products pieces. The separatory roll-up machine for bagel products production contains a dough chamber with a receiving funnel for dough delivery, pressurising rolls, a replaceable moulding mechanism containing rolling pins, a replaceable holder with rolling cups, kickers for discharge of pieces onto a band conveyer and a drive accordingly connected to the pressurising rolls, a mobile traverse, the rolling cups holder and the band conveyer as well as a microprocessor of the system controlling the machine operation in automatic mode. The dosing part of the moulding mechanism is designed in the form of dismountable plungers positioned vertically inside the dispensing zone of the dough chamber; each plunger contains a cylindrical part, a rod connected to the rolling pin via a thread or another connection or designed as integrated with the pin into a one-piece item; in the lower part of the rolling pin rod a compression spring is positioned so that to enable its interaction with the cylindrical part of the plunger and a thrust plate in the holes whereof the rolling pin rods are inserted; the upper part of the rolling pin rod is connected to the thrust plate via a thread connection allowing to regulate the value of clearance between butt-end of the cylindrical part and the rolling pin projection; the upper mobile traverse is equipped with check pieces. According to the invention, the machine has simpler design due to reduction of the quantity of details and various mechanical transmissions, ensures high accuracy of dough pieces dosing, additionally allows to exclude dough adhesion to the rolling pins.

EFFECT: invention improves the machine reliability in the process of operation and its performance.
