FIELD: food industry. SUBSTANCE: after extracting bitter substances from citrus fruit by nonpolar liquefied gas, fruit is treated with aqueous solution of substance having general formula R1-[NHn-R4-n], wherein R1 is arachidonic acid residue, n=0-3, and R is alkyl, in amounts from 0.5 to 1000 mg/t. After ripening for 2-5 h, treated fruit is impregnated with nonpolar liquefied gas at superatmospheric pressure, after which pressure is lowered to atmospheric value with velocity ensuring freezing of fruit. EFFECT: enhanced resistance of juice to microbial spoilage.
