FIELD: food industry. SUBSTANCE: after extracting bitter substances from citrus fruit by nonpolar liquefied gas, fruit is treated with aqueous solution of substance having general formula R1-(CH2)m-[NHn-R3-n]-X, wherein R1 is eicosapentaenoic acid residue, m=2-4, n=1-3, R is alkyl, and X inorganic acid residue, in amounts from 0.5 to 1000 mg/t. After ripening, treated fruit is impregnated with nonpolar liquefied gas at superatmospheric pressure, after which pressure is lowered to atmospheric value with velocity ensuring freezing of fruit. EFFECT: enhanced resistance of juice to microbial spoilage.
