FIELD: technology of juice production. SUBSTANCE: method involves extraction of bitter substances from citrus fruits by nonpolar liquefied gas and then treated by aqueous solution of a substance of general formula -[R1-(CH2)m-NHn-R3-n]-X, where R1 is acid residue of arachidonic acid; m = 2-4; n = 1-3; R is alkyl; X is acid residue of inorganic acid. Then fruits are aged for 2-5 h, and impregnated with nonpolar liquefied gas at pressure higher than atmospheric one. After it, pressure is released up to atmospheric with a speed providing for fruits freezing. EFFECT: increased juice stability to microbial spoilage. 2 ex
