FIELD: food-processing industry. SUBSTANCE: method involves extracting bitter substances from citrus fruits by means of liquefied gas; treating with acidified aqueous solution containing mixture of lowest alkyl ether of arachidonic acid and chitosan; holding them; impregnating at pressure above atmospheric pressure with liquefied nonpolar gas and reducing pressure to the value of atmospheric pressure at rate providing freezing of fruits. EFFECT: simplified method and improved resistance of juice to microbic damage.
