FIELD: technology of juice production. SUBSTANCE: on preparing citrus fruits after extraction from them bitter substances by nonpolar liquefied gas, they are treated by aqueous solution of a substance with general formula R1-[NHn-R4-n],, where R1 is acid residue of eicosapentaenoic acid; n = 0-: -3; R is alkyl in amount of 5•10-1-1•104 mg/t. After it, vegetable raw material is aged for 2-5 h and impregnated by nonpolar liquefied gas under pressure higher atmospheric, and then pressure is relieved up to atmospheric with a speed providing fruits freezing.
