FIELD: technology of juice production. SUBSTANCE: CITRUS fruits, after extraction from them bitter substances by means of nonpolar liquefied gas, are treated with aqueous solution of salt of arachidonic acid with N-heterocyclic base in the amount of 0.5-104 mg/t and aged for 2-5 h. Then fruits are impregnated by nonpolar liquefied gas under pressure higher than atmospheric one. Then pressure is relieved up to atmospheric with speed providing fruits freezing. EFFECT: increased stability of juice to microbial spoilage.
