FIELD: sugar industry. SUBSTANCE: apparatus has vessel with temperature-controlled jacket, refractometer, and microscope. Low-frequency vibration exciting device with adjustable frequency and amplitude has eccentric mechanism with driving and driven surface plates. Driven surface plate has finger with roller bearing kinematically connected with vertical stem. Clamping mechanism for fixing large saccharose monocrystals is mounted on lower end of stem. Apparatus is further provided with cup-type centrifuge, drying cabinet, accelerometer and strobotachometer. Apparatus of such construction provides predetermined hydrodynamic crystallization process conditions at crystal-solution boundary, and allows effect of speed of motion of crystals relative to solution at saccharose crystallization rate and crystal formation intensity to be evaluated.
