FIELD: fish industry. SUBSTANCE: method involves using novel preservative, such as mixture of edible chitosan used in an amount of 0.05-0.1 wt%, sorbic acid used in an amount of 0.1 wt% and antibac used in an amount of 0.3-0.5 wt% of caviar. Preservative of such kind is used for preservation of granular caviar of salmon and like fish and makes it harmless product with improved sanitary and hygienic factors. EFFECT: enhanced antimicrobial and antioxidizing action and prolonged shelf life.
