FIELD: liqueur and vodka industry. SUBSTANCE: invention relates to production of bitter liqueur "Tambovskaya with pepper". Ready liqueur has the following components, l/1000 dal: elecampane roots, ginger roots, tormentil roots, sowing coriander fruits, cube fruits, allspice pepper and black pepper mixture an aqueous-spirituous infusion of the 1-st and the 2-d blend, 100-101; red pepper an aqueous- spirituous infusion of the 1-st and the 2-d blend, 120-130; sweet clover leaves and flowering stem tips of the 1- st and 2-d blend, 45-50; lemon oil spirituous solution (1:10), 0.2-0.4; 65.8%-th sugar syrup, 57-58 and also: color, 18-22 kg and rectified ethyl alcohol of the highest purity and purified drinking water as measured for blend proof 35%. Invention provides preparing bitter liqueur of the proof 35% with high organoleptic indices and biological activity which has weak honey tint on the background of spicy, weak hot taste and complex spicy harmonic aroma.
