FIELD: alcoholic beverage industry. SUBSTANCE: aqueous-alcoholic solution is prepared so that to produce vodka of 40% strength. After mixing of alcohol and water in sorting tank, modified starch is added there, mixed for 40-45 min and aged for 16-20 h. Upon completion of settling, aqueous-alcoholic liquid is drawn by decantation and directed to filter-press "Progress" type with the use of pump. Filtered aqueous-alcoholic liquid is directed to receiver, and activated powder-like carbon is added there in terms of 600-1500 g per 1000 dal. Refined granulated sugar in the form of sugar syrup of 65.8% concentration or in the form of aqueous solution is introduced into the receiver. Citric acid is dissolved in softened water, and sodium bicarbonate is gradually introduced at constant mixing. After full dissolving of introduced ingredients, prepared solution is filtered through cloth filter and introduced into the receiver. Mixture of aqueous-alcoholic liquid, ingredients and powder-like carbon is mixed for 35-45 min and aged for 50-60 min. Vodka is drawn by decantation and directed for filtration to a filter of "Progress" type, where solution is earlier filtered after processing by modified starch. Prepared vodka is directed to receivers of ready production. Carbohydrate module "Frulakt" dissolved in hot softened water at temperature of 60-70 C is introduced at mixing in the receiver of prepared product. Almond infusion is prepared by one-time infusing with aqueous-alcoholic liquid with the following filtration. Filtrate is also introduced at mixing in the receiver of prepared product. Content of the receiver is mixed, corrected, if necessary, and directed for bottling with obligatory control filtration. Prepared vodka "Orel" contains the following ingredients, kg/1000 dal of ready product: carbohydrate module "Frulakt", 3.5-4.5; sugar, 4.5-5.5; citric acid, 0.09-0.15; sodium bicarbonate, 0.09-0.15; sweet almond (nuts), 0.2-0.4. Vodka also includes, l: aqueous-alcoholic infusion of sweet almond of the Ist decantation, 2-2.5; aqueous-alcoholic liquid, the balance. Claimed method makes possible to produce low-toxic vodka, to increase its stability at storage and to enrich it with complex of biologically active substances of natural vegetable raw materials.
