FIELD: food-processing industry. SUBSTANCE: method involves making basic mass of ice-cream in the form of hollow body by performing horizontal extrusion and feeding in alternation different fillers into body. Apparatus has extruder and filler feeding tube 2 located inside extruder and equipped with auger 5. Filler supplying branch pipes 4 are arranged on and communicated with tube 2. Basic part 8 or auger 5 defines bypass valve between filler supplying branch pipes 4 and filler feeding tube 2. Method and apparatus allows tubular ice-cream filled with different confectionery mixtures (chocolate with nuts, jam etc) in different proportions to be produced in the form of alternating inserts inside ice-cream portion.
