FIELD: food-processing industry. SUBSTANCE: method involves defrosting frozen raw food blocks in defrosting chamber; heating food packet 6 in two stages inside autoclave 1: at first stage heating food packet to temperature 10-15 C below average heating temperature from internal heat source-regenerative heat exchange vessel 5 and at second stage providing final heating from external heat source 2; cooling in two stages: at first stage cooling food packet 6 to temperature 10-15 C higher than average heating temperature provided by heat-carrier from vessel 5, where heat is accumulated for first heating stage, and at second stage cooling food packet to temperature 20-30 C higher than defrosting temperature by means of heat-carrier from defrosting exchange vessel 4, where heat is accumulated for defrosting food block in defrosting chamber via closed system.
