FIELD: food industry. SUBSTANCE: suggested salting mixture is reserved to salt meat, fish and other products. Common salt-based salting mixture contains sodium nitrite and sodium sulfite or sodium thiosulfate at the following ratio of components, wt.%: sodium nitrite, 0.1-1.0; sodium sulfite or sodium thiosulfate, 0.05-0.005; salt, the balance. Salting mixture could additionally contain potassium or sodium ferrocyanide at the quantity of 0.001-0.0005 wt. %. Salting mixture is obtained by mixing components in one or two stages.
