FIELD: meat-processing industry. SUBSTANCE: method of preparing sausage products includes preparation of minced meat from preliminarily prepared meat raw material and components prescribed by receipt, and additive based on vegetable oil raw material. Used as an additive is pumpkin seed oil and/or pumpkin oilcake in amount not less 0.01 mas.%. Desired product is formed from prepared minced meat, and then it is subjected to heat treatment or drying. Invention provides broadened assortment of sausage products for dietetic alimentation. Prepared, according to proposed method, products possess membrane-protecting action increasing activity of antioxidant system for organism protection. EFFECT: higher biological value. 5 ex
